I usually just use clabbered soy milk with vinegar when cooking, but I'm wondering if the soy taste is going to come through on the chicken. I have a kick butt chicken recipe I'd like to post and that would be the only modification needed. Any ideas??? I made it with the buttermilk, because it's just marinated in it and such a small amount is used just to get the coating to stick to the chicken that I was fine with it, but still.

Maybe use rice milk instead if you're worried about the soy taste? Plain rice milk is pretty tasteless, and I do the "buttermilk" sub of adding lemon juice or vinegar all the time with rice milk for baking.
