Apple Cinnamon French Toast

I think I've perfected my recipe, and it's been a big hit! I usually just sprinkle in the cinnamon and nutmeg, but I think one teaspoon of each should do! Usually makes about 2 servings, but you can double and triple it!
Apple Cinnamon French Toast
1/2 Cup Vanilla Soy or Rice milk 1/2 Cup "All Whites" (about 5 egg whites, I think) 1 Cup applesauce 1/2 Cup Maple Syrup 1 small loaf french bread, sliced about 3/4 inch thick 1 t cinnimon (or more for sprinkling on top!) 1 t nutmeg
Mix the soy milk, eggs, 1/2 cup applesauce, nutmeg and cinnimon. Dip the slices in and throw on a pan (sprayed with cooking spray) until nicely browned.
Mix the remaining applesauce with the syrup for the topping or dipping. I use 2 applesauce cups in the recipe, so they are each half full after making the mixture, and I just fill the rest up with syrup and pop them in the microwave. I also like to sprinkle some powdered sugar on top. ENJOY

Hey Marnie!
You can use Egg Beaters. All Whites is just a different brand and they're not yellow colored. They're very similar. You can also use rice milk instead of soy.

Do you think this would taste nice without the sugar/syrup? I react to all sugars rather badly but this recipe sure sounds yummy!

YES! Some people just sprinkle powdered sugar on top, but if you can't have that either, then just applesauce or any fruit you can tolerate would be great!

I tried this yesterday morning and it was soooo yumo! I have a question thought my batter made enough for prob 6 more slices--How long will that keep in the fridge?? Thanks and such a great recipe!
