Hi, Does anyone have any good Buckwheat recipes, especially bread and muffins? If Buckwheat flour is bad for you please let me know, but I seem to tolerate it. Barb

Barbara - Here's one from The Ultimate Bread Machine Cookbook (Tom LaCalamita).
BUCKWHEAT MOLASSES BREAD
Note: Interestingly enough, buckwheat is not even a grain. Originally a wild meadow plant, the low green plant with white flowers produces tiny seeds that are milled into buckwheat flour. It is highly prized by the Japanese who use it to make soba noodles and by the Russians who use it to make blinis.
3 cup capacity bread machines: 16 servings
2-1/4 tsp active dry yeast 3 c bread flour 3/4 c light buckwheat flour 1 tsp salt 4 tbsp non-fat dry milk or potato buds/flakes 1 tbsp butter/margerine 3/4 c plus 2 tbsp water 1 lg egg 2 tbsp molasses
Basic setting. per 1/2" slice: 97.1 cal, 2.69g protein, 19.2g carbo; .79g dietary fiber, .88 g fat, 1.87 mg chol, 139 mg sod.
