I'm not good at figuring out how to make a recipe safe but suggesting substitutions, but I have a personal suggestion for making choc. banana muffins. You could find a good banana bread or muffin recipe in the recipe index (or Heather's book has a great banana bread recipe). Then add some dairy free chocolate chips (like those you find down the natural aisle at the grocery store or at a health food store, they are usually semisweet). And then adjust the cooking time so you can cook them in a cupcake/muffin pan.

I've actually done this with Heather's banana bread recipe from the Eating for IBS book. It was a great little treat w/ the choc. chips. I can handle them very well if stable. I don't change the oven temp. but I obviously cut the time down and check them periodically. The muffins are done when a toothpick stuck in the middle comes out clean.

hope to help

Amber
