Banana Graham Muffins

I made these yesterday - SharonMello's Banana Graham Muffins . They are DELICIOUS. I made two batches - for the second batch I used chocolate graham crumbs and they were very good too. I just had one question. I used paper muffin liners and the bottoms of the muffins are stuck to the liners. When I take the liners off the muffins, the bottoms won't come off. Any ideas? Did I do something wrong?

I doubt it. I always have that problem with paper liners. I stopped using them, and instead I always use a non-stick muffin tin sprayed with Pam. It works like a charm, and you don't lose half your muffin that way!

They stick because there's hardly any fat in the muffins. I had to use liners when I made them because my muffin pan coating is flaking. I remember these muffins stuck worse than others even though I sprayed the liners with pam before baking them. I should try this recipe again. I forgot about it.

I think next time I make them I am going to try them without the liners. I'm really bummed! I made two batches of these and my freezer is full of muffins that I am only going to be able to eat half of!!

Any idea if the aluminum liners would cause the same issue? I have a package of those at home that I might try.

but I never use them because they're too expensive. If the muffins stick to the bottom, I just glance around the room to make sure no one can see me and then gnaw the muffin residue off the paper.

This happens when I make the Bran Flax Muffins (great muffins) too! It usually gets better when they're cooled. If I have some that sticks I just eat it right off the paper (Don't Waste them and all your hard work)what ever works!
