I wasn't able to find a recipe on there that is IBS safe either. Nor celiac.com site or in my two Gluten free recipe books. I love sandwiches and it makes it hard without the bread.

Yep, it's hard. They either add milk, dry milk, IF flours (or soy or bean which is gassy), 3 or more whole eggs, and lots of margarine/oil which is high in fat. GF bread recipes tend to be higher in fat because the GF flours bake better with fat. It's harder to replace the fat (with egg yolks, butter, oil) and get a decent baked product. They tend to fall apart.

Does your recipe book have anything that doesn't include the iffy flours or the milk and eggs? Just rice, tapioca, and potato starch? Or even quinoa?

Here are the recipes from my breadmaker's cookbook. (I have a Cuisinart Convection Breadmaker, which as a GF setting on it.) Two of them have cheese in them so I didn't include them here, but conceivably you could use soy cheese (not sure how well that would work but you could try it)....

Anyway, here are the others.

**NB: these are all bread machine recipes for 2lb loaves and they all require a special gluten free cycle. Follow instructions on your bread machine to make, re: order of adding ingredients etc. Notes in square brackets are my own notes.**

Gluten-Free Hazelnut Bread
1.5 cups lowfat milk, 80-90°F [lowfat/ff soy or rice milk]
4 tbsp unsalted butter, room temp [vegetable oil or safe margarine]
4 tbsp pure maple syrup
2 eggs, at room temp [4 egg whites]
1 tsp cider vinegar
2 tsp salt
1 3/4 cup brown rice flour [could use white]
1 cup cornstarch
1 cup potato starch
1/2 cup tapioca flour
1/2 cup amaranth flour
1/2 cup chopped hazlenuts [if you wanted to lower the fat, I think you could probably just leave these out]
2 1/4 tsp xantham gum
1 1/4 tsp gelatin
2 1/4 tsp yeast (active dry, instant or breadmachine)

Per serving (1 ouce): 117 calories (24% from fat), 20g carbs, 2g protein, 3g fat, 1g fiber


Gluten-Free Molasses Bread
1 3/4 cups low fat milk 80-90°F [lowfat/ff soy or rice milk]
4 tbsp unsalted butter, room temp [vegetable oil or safe margarine]
4 tbsp molasses
2 eggs, at room temp [4 egg whites]
1 tsp cider vinegar
1 1/3 cups garfava flour [that's garbanzo and fava bean flour]
1 cup tapioca flour
2/3 cup sorghum flour
3/4 cup cornstarch
1/4 cup potato starch
3/4 cup chopped walnuts or mixed nuts and seeds [again, you could probably leave those out to lower the fat]
1/4 cup currants (optional)
2 1/4 tsp xantham gum
1 1/4 tsp gelatin
2 1/4 tsp yeast (active dry, instant or breadmachine)

Per serving: 105 calories (33% from fat), 15g carbs, 3g protein, 4g fat, 2g fiber


Gluten-Free Rye Bread
1 3/4 cups low fat milk 80-90°F [lowfat/ff soy or rice milk]
4 tbsp unsalted butter, room temp [vegetable oil or safe margarine]
2 eggs, at room temp [4 egg whites]
1 tsp cider vinegar
1 tsp orange zest
2 tsp salt
1 cup brown rice flour [could use white]
1 cup garfava flour
1/2 cup cornstarch
1/2 cup potato starch
1/2 cup sorghum flour
1/4 cup quinoa flour
1/4 cup brown sugar, packed
5 tsp caraway seeds
2 1/2 tsp xantham gum
3/4 tsp gelatin
2 1/4 tsp yeast (active dry, instant or breadmachine)

Per serving: 87 calories (26% from fat), 13g carbs, 3g protein, 3g fat, 2g fiber

Hey Beth,,, sorry I havent' gotten back to you sooner. I am in the midst of doing my prep for my stupid colonoscopy tomorrow...I'm doing allright though.
Sorry if I didn't mention it earlier, but the bread I ate was the GF pantry, and I now realize that it WAS NOT IBS safe, but it didn't bother me at all. Sorry I cannot help more!
