Two questions please:

1. Why line the baking pan with foil?
2. You don't cover the chicken before baking?

Hey Bev!

I always line my pans with foil anyway, because I like the easy clean up. Don't know why it was required in this recipe, but I would've done it anyway.

Did you use balsamic or red wine vinegar?

Aluminum and Altzheimer's new

I'm always gunshy about using aluminum in my cooking and baking. They used to believe it contributed to Altzheimer's; I don't know if they still do, but I figure why take the chance?

Don's mom died of Altzheimer's. She used to always use aluminum ALL THE TIME, and she drank several beers (out of aluminum cans) every single day of her life -- Marie did love her beer! -- and I really got the connection. I just don't use aluminum ever.

Does it really make that much of a mess in the pan? Even if you spray it well with Pam first?

Yes Bev they still make a connection with aluminum and Alzheimers, but your aluminum baking foil appears to be less of a contributor than other things. (If you are skitish why not use baking parchment?)

Please look at the following articles, especially the last one. Your tofu may of a bigger threat of adding aluminum to your system than the foil you line a pan with.

I used balsamic. I just had the leftovers for lunch - still good!

Bev, that was only my guess as to why it was in the recipe. You'd probably be fine without it!
