Help me modify this recipe!

Lemon Squares
Crust:
1 cup margarine, softened 1 cup powdered sugar 2 cups flour
Filling:
4 eggs
2 cups sugar 6 Tbsp. flour 6 Tbsp. lemon juice
I assume I just have to modify the margarine and the eggs...what's the best way to do this? I haven't done much in the way of cooking for IBS...I used to just eat rice and potatoes all the time! Now that I've been have D I feel the way fat reacts in my bod...and I want it out of there! Thanks everyone, you're the best!

Hi Ruchie - for the eggs, just sub 2 egg whites for each egg. For the crust, I'm not sure. Check on the recipe index under Desserts and there's some other crusts listed - maybe you could replace this crust with one of those?

1 cup plus 1 TB Bisquick Reduced Fat Baking Mix 2 TB Powdered sugar 2 TB Firm Margarine 3/4 Cup granulated sugar 2 tsp grated lemon peel 2 TB lemon juice 1/2 cup fat-free egg product Lemon Glaze
Heat oven to 350°. Mix 1 cup baking mix and the powdered sugar in small bowl. Cut in margarine until crumbly. Press in ungreased 8" square pan and bake for about 10 minutes or until light brown.
Mix remaining ingredients, except lemon glaze. Pour over baked layer. Bake about 25 minutes or until set and golden brown. Loosen edges from sides of pan while warm. Spread with lemon glaze, cool about 1 hour.
Lemon glaze: 1/2 cup powdered sugar 1 TB lemon juice

Oh man.. now I have a craving for lemon bars. Will have to make these once I finish off making those anti-depressent brownies that everyone has been raving about.

Leah, in the recipe Karin posted, there are only 2 tablespoons of margarine. That makes for quite a low-fat recipe.

but I finally noticed tonight when I gave the recipe to someone that I haven't been putting the 1T mix in with the filling! I am so dumb. Incidentally they turn out just fine without it.
