Fragrant Fennel Brittle
FAST
MAKE-AHEAD
TOTAL TIME: 15 MIN
MAKES ABOUT 1 CUP
Roasted fennel seeds mixed with sugar candies are offered at the end of an Indian meal as a kind of digestif. In Mehta's East-West version, the seeds are coated in caramel to make a unique candy.
ingredients
3 tablespoons fennel seeds
1/2 cup sugar
2 tablespoons water

directions
Line a baking sheet with a 10-by-15-inch sheet of parchment paper. Toast the fennel seeds in a small skillet over high heat, stirring occasionally, until lightly browned, about 3 minutes.
In a small saucepan, cook the sugar and water over moderate heat until richly browned, about 13 minutes. Remove from the heat and stir in the fennel. Immediately pour the mixture onto the baking sheet and spread it 1/8 inch thick with a heatproof spatula. Break the warm brittle into rough 1-inch pieces.

Whoa. I'm sorry, but this looks SICK. Maybe it's because I've been brainwashed by everyone touting fennel to relieve gas, but it just sounds like making Imodium chip cookies or something.

I think I've had something similar to this after Indian meals. I hate fennel tea, but I love licorice, so these might be yummy.

I appologize. I don't know the name of the candies that resemble Wonka "Nerds," often served at curry restaurants.

I love them, though.

Now...I'm intrigued!

Kate.

There are days when if Immodium cookies were the only thing out there, I'd eat them. These at least sound like they'd be yummy!
