Happy Valentine's Week!
This week I'm trying Mexican Rice. I'm going to try it as a side with Sweet Tequila-Lime Chicken, which is one of my favorite recipes!

Last night I made the Tangy Lemon Whitefish from EFI (190-191). Yummy! I am not a huge fish fan, so I doubled the sauce recipe so there would be plenty to mop up with my bread (and cover any potential fishy taste ). I really enjoyed it and will definitely make it again! It was also great for integrating the veggies into the meal.

I'm going to try this tonight for dinner. I love shitake mushrooms.
I don't have any veggie broth though.. I don't think. I may need to sub chicken broth. I hope that works well too!

That will work just fine.... you can even add more mushroom then it calls for... as you know... they shrink big time while cooking.....

I did end up having veggie boullion cubes, so I did use the veggie broth. It was yummy!
