Technique question for IBS cookbook recipe

This pertains to the fantastic Vietnamese Lemongrass Chicken recipe from the IBS cookbook. I LOVE this recipe and have made it several times. My question concerns the caramel sauce--I always run into trouble when I pour the water in at the end--the syrup always gums up into a sticky ball which I then have to rework back into a liquid by carefully scraping the ball off two spoons. This doesn't always work and I've had to throw the whole thing out and start over a couple times. I must be doing something wrong here--any suggestion or techniques? Thanks much, TMC

I have never made this but could it be that you are pouring the water in too slowly? or too quickly? It sounds like a timing issue.
