Vegetarian anyone?

I am looking for good vegetarian recipes that my husband (meateater) will enjoy. I see a lot of recipes for chicken, but I can't eat any meat.

My husband is a PICKY eater. Put us together and we are every chef's nightmare. He doesn't like typical vegetarian fare like tofu, and there are certain veggies like mushrooms that he can't stand. I am looking for a hearty meal that is IBS safe, vegetarian and will satisfy us both!

Why not try some of the ground turkey or ground chicken recipes with TVP or quorn mince? TVP is a meat substitute and is available in Health Food Stores.

Give us some hints about the types of food hubby loves/hates so we can help more specifically too.

I don't know if I have seen quorn at my grocery store before. I'll have to check that out--maybe take a trip to a specialty market in my area. The things that my husband likes that I make are: most of my pastas
my frittatas (i eat egg beaters)
quiches
risotto w/ spinach
he likes my vegetable wellington I make with pastry crust
his fav. veggies are: potatoes, corn, squashes of all sorts, spinach

I tend to be experimental, but have restraints because of him. I tried making a walnut loaf to mimic meat loaf and that didn't go over too well. I liked it, but he didn't.

Check out www.quorn.us _ there are lots of stores in Phoenix that stock it: (full address details etc on the website)
