Well...I finally have time to sit down, make a list of things I have access to in Japan thereby taking advantage of your previous offer Sharon. I think it may be safe to say that I just might be your greatest challenge to date!

I may have to add to it from time to time if I find stuff in other supermarkets. Now - if you Sharon, or anyone else can come up with recipes that can aid this limited list - THANK GOODNESS!

I have a 2 burner stove, a microwave that has an oven built into it, a large george foreman grill, a rice cooker and a toaster oven.

I can access almost all spices, flour, baking powder and soda, eggs, sugar (white and brown), most veggies (except green pepper, zucchini) and fruit (but fresh fruit is very expensive)

We eat mostly chicken and a bit beef.

I can get most regular dairy products - no soy anything. But we tend to avoid them.

I'm almost out of Pam cooking spray so once that's gone - I'm back to oil or margarine.

I can get soda crackers, white bread, french bread, english muffins, small buns.

I can get most pastas, canned tomatoes (diced or whole), tomato paste, sauce

I can get canned fruits, canned tuna (haven't had it in years!), canned mushrooms

I'll have to look to see if I can find cocoa powder.

I can get frozen mixed veggies, frozen peas, corn, etc

I can get cartons of orange, apple, pineapple juice

Now for the allergies:
-any fermented bean product (miso, et al)
-eggplant
-fish (I like shrimp/prawns but here they come with their heads and limbs and the last thing I want to do is tend to that - so I avoid them and other forms of seafood. Only meat comes headless and limbless)
-horseradish
-spinach
-avacodo
-brussel sprouts
-any mushroom besides regular white ones

-> I think that's about it (for now). I may have left out some obvious things - please ask me and I'll be able to say yeah or neah.

Thanks in advance for any help anyone can give!!!

Kim

Kim - thanks for the list. I printed it out and will keep it in my kitchen.

If you can get shrimp/prawns there, that's great. Actually, the heads are great for making stock. I save shrimp/prawn shells (it's hard to find shrimp with their heads ON here) in a zip bag in the freezer til I get a bagfull and then cook them with water, onion, lemon, celery, s/p for a few hours, strain it, and put it in Glad containers (2 c ea) in the freezer. Whenever I make a shrimp creole, etc., I have shrimp stock and don't have to use water (yukky!). Get your hubby to rip off their heads and feet. Actually, it's not so bad because they're already dead. It's not like you're the executioner--somebody already did that for you. I used to feel that way about raw chicken, but now it's just second nature.

Have you checked thru the recipes already posted to see if you can make any? So, I guess you can't get tomatillos or can chilies, right?

Have you tried cutting chicken into strips, and dipping into a herbal mix of oregano, basil, and parsley, then cooking it on the Forman grill? Quick and safe dinner. You could use any herb mix you like. I use my forman grill more than my oven! I dip chicken strips in bread crumbs (no milk/egg) while they are wet and cook them on the grill also.

Kim - I don't like the food on my plate looking back at me, but if I'm just preparing it, it doesn't seem to bother me the same way.

Kim - Can you get turkey, raisins, root veggies, barley??
Did you say you didn't have a slow cooker? If not, that would be a great thing for someone to get you for your birthday or xmas!

Any recipes I post for slow cooker probably could be adapted to cook on your 3-burner stove--just shorten cooking times, of course!!!

Sharon

PS - I've started to post some recipes that I think you should be able to use.
