Cooking a valentines dinner for my fiance who suffers from IBS

Hi
I'm looking for some help please. My fiancehas recently been diagnosed with IBS and as you all know this is causing her major problems with the food that she can now eat. Just wondering whether anyone has any ideas as to what I could cook for her on Valentines for a special dinner!!

Please take a look at the IBS recipe exchange index link and you will find literally hundreds if not thousands of ideas.
They are all categorised so you can pick out an entree, main and dessert if you like.
