I once saw a comment on Kree's Pumpkin Bread but now I can't find it. Does anyone have that recipe?

Or perhaps Harvest Pumpkin Apple Bread? That one was popular for a while.

I'd be happy to! I was actually surprised when I did a search to answer this question that I had never posted that one. It's been a family favorite for as long as I can remember!

Spiced Pumpkin Bread
(Makes 2 loaves)

Ingredients:
3 cups sugar
1/2 cup vegetable oil
1/2 cup unsweetened applesauce
6 egg whites or 3/4 cup Egg Beaters
1 16 oz. can solid pack pumpkin
3 cups all-purpose flour
1 tsp. ground cloves
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
1 cup coursely chopped nuts (opt.)

1. Preheat oven to 350º.
2. Lightly spray 2 9x5-inch loaf pans with non-stick cooking spray.
3. Beat sugar, oil, and applesauce in large bowl to blend.
4. Mix in egg whites and pumpkin.
5. Sift flour, cloves, cinnamon, nutmeg, baking soda, salt, and baking powder into another large bowl.
6. Stir into pumpkin mixture in 2 additions.
7. Mix in nuts, if desired.
8. Divide batter equally between prepared pans.
9. Bake until tester inserted into center comes out clean, about 1 hour 10 minutes.
10. Transfer to racks and cool 10 minutes.
11. Using sharp knife, cut around edge of loaves.
12. Turn loaves out onto rack and cool completely.

If you make this you will not regret it. Everyone in my family thought of this as a special dessert -- almost like pie or cake. It was amazing. My boys get to have "dessert" after they eat all their food -- and they would ask for this as their dessert. I made it for the first time around Thanksgiving. Good stuff.
