butter substitute?

I am very new to this way of eating....was use to the low carb diet(s) and almost never ate potatoes. Now that I'm going to try and introduce white AND sweet what is a good butter substitute? I can't see eating them dry--even with fat free sour cream and/or fat free cheese? Any suggestions? Thanks so much.....

I like using Soy Garden. I find it at most grocery stores in the produce section (where they sell the tofu, soy cheeses, etc.)
