What the heck are these things? Anyone know? I want to make a new chicken and pasta dish, and the recipe calls for "cellophane" noodles. I don't think I've ever had them. Are they oriental? I don't like Chinese food, so if they're oriental, I need a substitution. Anyone got any suggestions?

when we were little...we called them snot noodles!! LOL
Cellophane noodles, also known as bean thread, harusame or glass noodles, are fine, dry transparent noodles made from green mung beans paste (starch). They are used in Chinese, Thai and other Asian cuisines.

You do find them in the Asian market and they are totally edible. If you like rice noodles or even rice you will be fine with them. The Vietnamese use them alot.
I went to our local Asian market once looking for those things and in Houston, if you go to an Asian market; finding someone to help you "in English" is a challenge.
So I find this man ask ask where cellophane noodles are and he says "aaaiiile siiix....you find noodoo's"! I knew that but I told him that I needed cellophane noodles and I couldn't find them. You should see aisle 6, there are about 800 varieties of noodles and they all look the same! He got irritated and says again....."aaaiiiile siiix....aaaiiiile siiix noodoo's eberywheya!" and walked off!
1.2 hour later, I left "aaaaiiiillle siiiiix" with my nooodoo's, I mean noodles and enjoyed the dish I made very much. It's a good thing I am 1/2 Asian and could make out what he said, I think otherwise I would still be on aisle six today!
