I haven't actually tasted this, but has anyone used it instead of coffee in recipes for baking? I saw it at my store today and was wondering if I could use it for that.

IBS-A for 20 years with terrible bloating and gas. On the diet since April 2004. Remember this from Heather's information pages:
"You absolutely must eat insoluble fiber foods, and as much as safely possible, but within the IBS dietary guidelines. Treat insoluble fiber foods with suitable caution, and you'll be able to enjoy a wide variety of them, in very healthy quantities, without problem." Please eat IF foods!

and the flavor wasn't bad at all. Since I can tolerate coffee drinking the "fake stuff" just felt funny but I will say the flavor was not bad at all.

I can't think of a reason not to try it in your baking. If you try it, please let us know how it turns out!

I suppose you could... although honestly it doesn't taste a lot like coffee. I drink it frequently, and it's a great sub, but not really coffee-like. I'd recommend using Rocamojo or Soyfee if you can get your hands on those. They have a much more realistic coffee taste.
