Can this recipe (my mom's chicken casserole) be converted?

Greetings,

This was my favorite dish growing up. Have been able to convert all my other recipes to the IBS diet, but this one has me stumped. Any suggestions from all you accomplished chefs out there? :-) Thanks.

Easy Chicken Casserole

4 skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream
32 buttery round (Ritz-type) crackers

Preheat oven to 350 degrees F.

Boil chicken until cooked through (no longer pink inside), about 20-30 minutes.
Chop into bite size pieces and place in a 9x13 inch baking dish.

Combine soup and sour cream.
Pour mixture over chicken and top with crumbled crackers.

Cover and bake at 350 degrees F for 30 minutes.

Serve over white rice.

Makes 4 servings

This is what I would do. I would use this condensed soup substitute recipe for the soup, and I would use my favorite brand of plain soy yogurt (I like WholeSoy), drained to remove some of the water, for the sour cream. I would go the health food store and buy crackers that look like Ritz but are lower in fat and don't contain hydrogenated oil (I think they're made by a company called Barbara's Bakery?). Finally, I might add some fresh parsley or something else to perk up the taste of the casserole with all these soy subs. Good luck!

HI,
I see the makers of Rice Dream make a soy cr. of mush. soup sold in cartons like the rice milk in our supermarkets.

Also, do a search for crackers. I see a lot mentioned, & wrote some down. Lo fat Ritx, FF saltines, Heather likes Melba toast (she likes garlic), rye krisps, also lo fat Wheat Thins, & Rite Lite Rounds fr. Barbara's Bakery (taste like Ritz) that I think Tess is talking abt.

Maybe some bread crumbs (italian if you can tolerate) would add some taste.

They do, but I didn't recommend it because it has the texture of cream of tomato soup, a thin puree, not at all like Campbell's Condensed Cream of Mushroom Soup. It tastes good, and I actually created a tuna noodle casserole using it, but you couldn't really sub. it for the Campbell's soup, sorry.
