Eeek! I find myself nearly out of potatoes & I am clueless re: which variety to purchase next. I've been eating white potatoes lately. I like the purple ones alot, but they're hard to find (okay, IMPOSSIBLE) around here at the moment.

What is your favourite variety of potatoe? I'm tempted to try Yukon Golds. Please share your thoughts re: potatoes (that ultra cheap, IBS staple food).

Sweet potatoes! I love them roasted, or made into fries.

Honestly, I just buy whatever brand of potato happens to be on sale that day, or that looks particularly good. I DON'T like the baking potatoes, but I do enjoy the Yukon golds. I'm more into the 'fluffy' potatoes, not so much the 'starchy' ones.

Also, baby red potatoes are LOVELY roasted with some garlic and herbs, and go fantastic in a potato salad. They are small, so they cook quickly as well.

Alright, now I'm craving a potato...

I usually buy Russets... or sweet potatoes, as Raven mentioned. I just love all potatoes.

It depends on what I'm going to do with them. For oven fries and baked potatoes, I like Russets best, then Idahos. For stews, mashed, stuff like that, I love Yukon golds. (Here's a thread a thread where LittleMinnie and retrograde explained potatoes so I finally understood why I liked different potatoes in different recipes.)

I keep looking at the little fingerling potatoes - they're just so cute. I wonder how they would work in something like Heather's Crunchy Skillet-Browned Garlic New Potatoes.

I also like sweet potatoes. MCV's Twice-Baked Sweet Potatoes are to die for or just baked with a little IBS-safe margarine and salt.

I call myself a cook, and I don't have a favorite potato! Heh. Actually, I just buy the locally-grown potatoes in 20lb sacks - no idea what they are, probably russets, but Maine potatoes are THE BEST so I've never questioned what they are.

The only time I ever have a preference is when I'm roasting them with the skins on, and then I get the little red-skinned new potatoes. I can eat the skins on those just fine, but I can't eat the skins on any other kind.

I do remember getting a certain kind of potato once, and finding that they were *terrible* for mashing. I wish I could remember which ones they were - I'm pretty sure it was the Yukon Golds. If you're just going to bake them, roast them, make oven fries, or even potato soup, they're fine.

I just buy a bag of potatoes. Sometimes I look to see where they were grown, but I don't usually care about what sort they are.

I didn't know they sold the purple ones in stores! We grew some of those one year at a museum I used to work for.

Thanks for submitting your ideas. I wish they sold them in variety packs. Maybe I'll just loosely make my own. I've tried russets and just didn't really like them. I do like red potatoes, though. Maybe I'll spy some fingerlings. It sounds like I'd really like Klondike Rose or Yukon Gold, so I'll just follow my more "informed" instinct."

I have a better idea re: what to look for. Thanks especially to Sand for pulling that very helpful thread. Little Minnie has a way with explaining such earthy matters.
