We are having Christmas at my Parents this Sat (12/17), My Mom's birthday is the 18th and Dad's is on Christmas Day....so I make a cake that is 1/2 birthday and 1/2 Christmas! 
This is Heather's Peppermint Fudge Cake, w/icing of 1 cup powdered sugar, 1-1/2 tablespoons water, 1/2 teaspoon vanilla extract, 1/4 teaspoon peppermint extract. You have to act fast if you want to add toppings, cuz the icing sets fast.

Not very.... I only used a 1/4 teas. Next time I might do a little more peppermint and less vanilla... but I really like peppermint maybe just another 1/4 teas.
