Cookies from cake mix? Anyone tried this?

I found a recipe for making cookie dough using box cake mixes. You add 1/3 cup of oil and 2 eggs to the cake mix and a dough forms. You can then make 3 dozen cookies. You flatten them to 1/4 inch thickness and bake for 6-8 minutes at 375 degrees.

Do you think using Duncan Hines cake mix (which many ppl have said is safe), 4 egg whites, and canola oil would work?

You could probably even use less than 1/3 cup oil since recipes usually call for too much. Maybe like 1/4 cup as long as the dough is moist enough? Maybe if it needed more moistness you could add a touch of unsweetened applesauce (especially if using a chocolate cake mix since the flavor bakes out of the applesauce)? Then, as long as you don't overendulge, I would think this could be a safe and tasty recipe.

What do you guys think? then again, maybe you all have tried/discovered this before!

I've tried it, but it was pre-ibs so I used whole eggs. They were pretty tasty, though. I have the recipe at home. I could post it this evening if anyone's interested and we could modify as necessary.

Honestly, I would probably use almost all applesauce, since cake mixes contain their own fat. As a matter of fact, I'm pretty sure I've seen a recipe using applesauce, egg whites, and cake mix, just like what you're describing.

I would replace all the oil with applesauce though, I agree with Kree.. hrm- maybe I'll make those for one of the parties coming up this holiday season...

cake mix cookies

I brought the yellow cake mix/choc chips ones to an xmas gathering last year and got good reviews. (although maybe they were just being nice, and gagging secretly as they dutifully munched their third.)

Here is my recipe:

1 Cake Mix
1 container egg substitute(equivalent to 2 eggs)
1/2 c applesauce

Mix everything together, drop in balls on cookie sheet, bake at 350 degrees 8-10 minutes.

(If you can tolerate it, you can add about 2 cups of mini-chips, dried fruit or finely chopped nuts or anythng else you can think of for some variety)
