These should be perfect to take on an unexpected trip to my new in-laws.... Granddad is not in the best of health and they were thinking we should really get over there before Christmas to see him. We leave Sat @ 5am... it is about a 6-7 hour drive depending if I need to stop along the way

Thanks Lana... I should be fine. My Step Mother In-law (now that is a mouthful) emailed me to ask what kind of foods I can and can't eat. Diner was my only concern really. So, I told her I would help her cook.... I suggested spaghetti w/ground turkey breast in place of beef and no cheese in the sauce for one night and then CRISPY HERB BAKED CHICKEN that I saw on one of your posts and made last week for the other night. She emailed me back to let me know she had everything but the soy parm & parsley... so, I'm taking that with us. So, from the sounds of it... for dinner anyway.... everyone will be eating an IBS meal

Isn't that so nice though...I know when I go to family dinners everyone cooks IBS safe meals and it makes me feel so special.

It's so nice of them to be so supportive of your diet!

Yes, it is great.... we will see what happens at Christmas though, as the my Father In-law and Brother In-law are out hunting right now LOL

Shell it is great you have family support for your IBS. I do too and it is so nice when family members ask me what I can eat.

I'm going into Milwaukee tomorrow and plan to bake Peppermint Fudge Cake, since my father-n-law loves chocolate. I also have to bake his favorite chocolate chips, which are not IBS safe. Of course I will eat one of those, but will forgo the glass of milk.

It so cool to read about all your cooking and baking experiences!
