That's crazy, Theresa! What are the odds, eh? lol

Here's the recipe:

3 cups white flour
1 tbsp baking pwdr
1/2 tsp salt
3/4 cup sugar
2 tbsp cornstarch
1 cup vanilla soy milk
1 tbsp apple cider vinegar
2 tbsp orange zest (from about 2 oranges)
1/2 cup fresh orange juice
1/4 cup canola oil
1 cup chopped fresh or dried cranberries

Preheat oven to 350. In a large bowl sift the dry ingredients together and stir well w/ a wire wshisk or fork to blend. Set aside. In a small bowl combine vinegar and soy milk and set aside. In a med. bowl whisk together orange juice, zest, oil and the soy milk mixture. Blend well. Stir the cranberries into the wet ingredients. Add wet to dry with a few swift strokes of the wooden spoon until blended. Pour into non-stick loaf pan sprayed w/ cooking oil; smooth batter evenly w/ a rubber spatula. Bake for ~1 hour or until toothpick inserted into the center comes out clean. Cool on rack.

Makes one 9x5" loaf (16 slices)
