Okay you cooking/recipe queens, here's a challenge for you...cookies/muffins that aren't high on the glycaemic index! So pref. no sugar and pref. something higher fibre like oatmeal in them!

I want to bake as it's coming up for the holidays but all the things I would normally bake are out on my new diet!

I'll have ot think on that one, but I can probably come up with something come closer to the holidays... do you care if they aren't overly sweet? if not, applesauce and some sweet fruit instead of sugar, if not, maybe stevia? or is that out?

I don't mind not very sweet - now I'm off sugar, fruit tastes so sweet to me! But I don't use Stevia (too scared having always been intolerant of all sweeteners!).

How about these that I posted a couple of months ago: Very Berry Muffins

You could sub a tablespoon or two of molasses for the sugar (I use a tablespoon of molasses and I cut the white sugar in half to sub for the brown sugar myself), and if you play with it, you could probably up the oatmeal/flour ratio, or sub a GF flour if you wish!

I'm saving that recipe and I'm going to start experimenting as soon as the new kitchen is fitted next week (I currently don't have any counters or cupboards so baking is a bit hard! ).

I wonder how little sugar I could get away with? Possibly even less if I used raspberries instead of blueberries????

I've been intolerant of all artificial sweeteners for so long (migraines, excema, asthma, IBS, Fibro....) that I'm scared to even try Stevia.

I think I used 1/4 cup white sugar + 1 tablespoon molasses last time, and they tasted fine to me. They're not sweet, but they have a nice texture to them. And the molasses makes them a nice color. For 12 muffins, it means there's 1 teaspoon of white sugar per muffin if you use 1/4 cup. Does molasses count against you as well, or is that ok to use to sweeten?

linz, i think stevia, even though it's a no-calorie sweetener, is in a totally different category from the chemical sweetners. you know i don't buy the natural=safe thing, but stevia, i believe, is just a plant that tastes sweet but has no sugar, as opposed to the modified sugar molecules and other weird things the artificials are.

I've got asthma, migraines and IBS and no issues w/ Stevia.
Sugar gives me a wicked stomach ache.

I also use it--however it's super mega sweet. A little lasts a long time/goes a long way.

It's the safest sweetener out there.
