I think I used 1/4 cup white sugar + 1 tablespoon molasses last time, and they tasted fine to me. They're not sweet, but they have a nice texture to them. And the molasses makes them a nice color. For 12 muffins, it means there's 1 teaspoon of white sugar per muffin if you use 1/4 cup. Does molasses count against you as well, or is that ok to use to sweeten?

linz, i think stevia, even though it's a no-calorie sweetener, is in a totally different category from the chemical sweetners. you know i don't buy the natural=safe thing, but stevia, i believe, is just a plant that tastes sweet but has no sugar, as opposed to the modified sugar molecules and other weird things the artificials are.

I've got asthma, migraines and IBS and no issues w/ Stevia. Sugar gives me a wicked stomach ache.

I also use it--however it's super mega sweet. A little lasts a long time/goes a long way.
It's the safest sweetener out there.

thanks guys.. I still plan on experimenting some for my own sake but now I have these to try in the meanwhile.
