So, how did all the green bean casseroles turn out? I'm curious re: solutions to the canned condensed cream of mushroom soup "problem/challenge."

The Imagine Creamy Portebello Mushroom Soup is a good substition for the green bean dish. I was a spoiled girl this year and just got to eat and enjoy so I didn't watch the preparation. My dad (the cook) said it looked pretty runny and had a gross color ("muddy") when he put it in the oven, but everybody was pleased with the final product. A bit darker in color but tasted great!
He didn't use anything to thicken the soup.
We're definately doing this one again next year!

Kate- I used your suggestion and thickened it with cornstarch and then made it with soy milk and the rest of the ingrediants. The only differnce to me was that it looked darker but it still tasted great! Everyone loved it!

That's awesome! I'll have to file that solution. I always thought that some of those IMAGINE soups would make great sauces. I often add extra mushrooms when I'm eating it just as a soup. I bet it would be yummy thickened and poured over mashed potatoes.
