Leftover Turkey?? Micro Turkey Tetrazzini

I thought since y'alls going to have leftover turkey, you might like this recipe. It used to be an old favourite of mine - and I dearly missed "creamy" meals. I simply substituted leftover gravy for milk (Thanks, Mom for that tip!) and soy parmesan for regular and I was back in business!!!

1/4 cup margarine (or 2 tbsp)
1/4 cup flour
1 tsp salt
1/4 tsp pepper
1 tbsp parsley
1 cup leftover gravy (if you don't have any, make an instant fat free kind)
1 cup vegetable or chicken broth
2 tbsp sherry (optional)
2 - 4 cups leftover turkey
4 oz. uncooked noodles, like lingine
1 cup or so frozen peas
1 cup mushrooms, optional.
1/4 cup soy parmesan cheese (optional)
Cook noodles according to directions on package.
In a large microwaveable safe bowl, add margarine. Turn on for a few seconds till it melts. Add flour, salt, pepper and parsley. Stir till smooth. Slowly add chicken broth, stirring until smooth. Add leftover gravy. Microwave on medium high for 6 to 8 minutes stirring twice, until thickened. Add leftover turkey, mushrooms, parmesan and cooked noodles. Microwave about 12 - 14 minutes on medium, until bubbly. Add frozen peas and stir well. Let set 5 minutes and serve!!!

Note: you can also substitute the chicken broth for soy milk.

This sounds YUMMY! I actually was planning to make a turkey tetrazzini today, using a new recipe from The Barefoot Contessa (Network TV). She uses a lot of cream, and I was just gonna substitute soy milk. But I like the idea of the turkey gravy instead. Thanks Mom!

I am making this tonight and I have a dumb question how do you make fat free gravy?? Is it just chicken bouillan thickened with cornstarch??

Hain Vegan Gravy Mix I've seen this in many stores. I've tried the brown gravy, it was really good.

Chicken Gravy

serving: 6

7 chicken bouillon cubes
2 cups water
1/2 tsp. celery salt
1/2 tsp. onion power
2 Tb cornstarch
1/2 cup water

In a sauce pan mix first four ingredients together over medium heat, in a small bowl mix the cornstarch and 1/2 cup water and then add to first mixture when hot, stir until thickened.

I've always used the traditional leftover gravy (we always syphen off the fat).
Any fat free turkey gravy mix should be fine.
You can also substitute the broth for soy milk.

Angela - the original recipe calls for a cup of milk. You can always just substitute the gravy for soy milk.

I noticed in this recipe that it calls for bouillon cubes. The cubes that I bought at the grocery store have MSG in them. I never knew that.....until I decided to look on the package the other day. Wish I would have never done that. Now, I'm afraid to use them!

Do you buy bouillon cubes that don't have MSG in them from a HfS, or do you just use the ones from the regular grocery stores???

Hey Alicia,

Kudos to Mom and you! It came out great. But I made some changes. I used your recipe AND one I printed off the internet (Food Network), I believe it was Giada's recipe ("Everyday Italian"). Hers contained FAR too much fat, which I cut out completely, but I also cut out the soy parmesan, 'cause it didn't really need it. There was a lot of flavor in the turkey stock I had made, so I omitted the parsley. I didn't use any gravy at all. I made a roux with the flour, butter, and chopped onion, in my large saucepan, then added the white wine (sauterne) and turkey stock, then cooked it all on the stove instead of the microwave. Lets see, what else -- oh yeah, I doubled the amount of linquini, wine and turkey. Giada uses fresh thyme, but I omitted that as well.

It was delicious! I'm having more of it tonight, and then The Bird will be all gone.

Thanks everyone! I will have to make this another time because I couldn't retrieve the info because our phone line is down at home so no internet. Plus my turkey just wasn't tasting very good yesterday so I pitched it. But thank you very much for the input. I am printing it off today at work so I have it for next time!!
