Need help on creating a recipe!

I've had the idea for the past while to make an apple couscous, probably as a savory thing.

My main issue is how to get the intense flavor of the apple and still have the texture of the couscous.

I'm also thinking of throwing some soy sauce into the mix, for a nice counterbalance to the sweetness of the red delicious apple.

Other things that are making me draw blanks:
-the apple browning
-cook the apple, or leave it uncooked?
-how to cut/chop the apple? I'd prefer to not puree it
-how to possibly transform it into a dessert?

I've got an itch, and darned if it needs scratching!

Anybody have any ideas?

Chopped dried apples?

Cook the couscous in apple juice?

To make a dessert, add some honey/sugar and some cinnamon?

Perhaps use finely grated apple? (get out those funky food processor blades!)

Lemon juice prevents browning. I like Melissa's suggestion re: cooking in apple juice/cider. I'd personally use cranberry--I like the tart contrast.

Definitely spice it up, i.e. cinnamon, cloves, nutmeg. A little rice milk/cornstarch and it's got that creaminess.

Ooooh. How could I forget maple syrup? That would be amazing. Fresh ginger? Or candied ginger? Marshmellow fluff? (is that safe???) There is the raison option. Personally, I think raisons are disgusting. Maybe cranberries or dried cranberries?

Or skip the cranberries/dried cranberries and get that sweet tart gooeyness with canned cranberry sauce? Warped, I know.
Carob chunks? Dairy free hunks of chocolate? Nuts, if they're safe for you. Personally, I'd go melted marshmellows or marshmellow fluff and cranberry sauce.

Which, in turn would make me crave gummie bears.

I was thinking of cooking it in apple juice, but I also wanted to have chunks of apple IN the couscous...

Hmmm, the dried apple could be promising though!

Oooh, an apple/maple syrup couscous?! YUM!

I'm not a big fan of cranberries in general, but cranberry sauce in couscous would be kinda neat for a christmas subsitute.

I was thinking of grating the apple, but I considered mincing as a better option. It'd just take forever!


Personally, I don't like raisins in couscous (though anywhere else they are fine).

I wonder if anyone has ever BAKED with couscous!

Alright, now I just sound crazy!

It's not baking, but here's a recipe for Couscous cake I have, don't remember where I got it from:

Blueberry Couscous cake (makes 18-24 servings)

6 cup apple juice
1 tbsp vanilla
3 cup couscous
1 pnt blueberries


Pick over blueberries, wash and set on paper towels to dry.

Combine apple juice, vanilla, and couscous in a large saucepan and bring to a boil. Cook, stirring constantly until thickened and all juice absorbed. Remove from heat. Gently fold the blueberries into hot mix.

Rinse, but don't dry, a 9 x 14-inch cake pan and pour the mix into it. Chill until set, about 2 hours. Cut into squares.

Variations:
Use strawberries in place of blueberries, top with unsweetened fruit jam thinned with a little water, arrange fruit slices on top for decoration.

Maybe that can give you some ideas?

Oh, this sounds fantastic!

I was also thinking of maybe making 'rice' pudding, but with couscous...I think it'd be an interesting texture.

These are all wonderful ideas, I think I'm going to take some time and go create!

If you want to include apple chunks in the couscous, try carmelizing the apples first. Use some cooking spray and sugar, and sautee them in a fry pan until they are golden brown. I would slice them and then chop them into smaller pieces when they're carmelized.
