I forgot the darn onion, so couldn't make it this week.  I had to cook my chicken yesterday. I had chicken tenderloins, so I ended up breading them, browning in skillet sprayed with non-stick spray, then baking in the oven with some crushed tomato and topping with rice mozzarella & parm near the near the end. Came out very yummy, so dinner was not a total loss yesterday! 
Chicken stew will definitely be my What's Cooking? for next week - I've already got "onion" on my shopping list!

Lol, Melissa, that sounds like something I would do! I already have a few possible choices set aside for next week too, because I knew I wouldn't have a chance to make anything this week. But I'm not telling what they are yet!
