I just made the yummiest, easiest shrimp dish - I just had to share!!! I know a lot of people are not fans of mustard (I actually am not a big fan myself), but my husband is, so I had to try it for him. It turned out sooo good, and I don't even like mustard. Anyway, here is the recipe.

Shrimp with Mustard Sauce

1/4 cup finely chopped onion
2 garlic cloves, minced
2 teaspoons olive oil (I use extra virgin)
1/4 cup white wine or apple juice
2 Tbsp Dijon mustard
1/8 tsp pepper
1 pound uncooked shrimp, peeled and deveined
1 small tomato, seeded and diced

In a nonstick skillet, saute onion and garlic in oil until tender. Stir in the wine or apple juice, mustard and pepper. Bring to a boil. Reduce heat to medium-low. Add shrimp; cook and stir until shrimp turn pink, about 5 minutes. Stir in tomato; heat through.

This is sooo yummy - you all have to try it. I served it over rice...mmmmm

You are so going to love this, then. It is awesome. My husband says it is his new favorite dish now. I am going to be making it once a week for the next month or two now - thats what always happens when he has a new favorite!

I think apple juice is a trigger food. Is it safe to use in recipes?

And where do you get uncooked shrimp? I've only seen it precooked.

As far as I know, as long as you use the kind with no HFCS in it, it is not a trigger. I didn't get sick after eating it last night. I know I cannot cook with white wine because of my GERD, so I used apple juice. Plus it was cooked into the sauce, I don't drink it plain or anything. I know unpeeled apples are a trigger, but peeled apples are safe.

Anyone else know if apple juice is a trigger?

I was thinking about serving it over some fetticine (sp?) noodles or something like that. I think rice worked out very well, though, because it had just enough sauce to make the rice not seem plain.

Apple juice is only a trigger if you are sensitive to HFCS I believe.

Also, this recipe makes multiple servings, and only calls for a 1/4 of a cup of apple juice. In reality, you would only be ingesting a quarter of that which isn't likely to trigger an attack.

Sorry - I forgot to answer that question. I buy the frozen, already peeled and deveined shrimp in the frozen food isle next to the seafood section. It usually comes in 1 pount bags. I always buy the medium.

I am sensitive to HFCS - I used the apple juice, but I got some that didn't have any in it. No problems for me.

For most people, fruit juices are much easier to tolerate when you use them in cooking than when you drink them. It gives you more of a soluble fiber buffer... plus you don't usually end up getting as much in a single serving.
