want to make some sort of molded side dish

It is so pretty when fancy chefs make little dishes in molds and plop them over onto a plate. I need help finding some sort of vegetable type molded recipe for Sunday. I am making Heather's salmon and wheat berries. I wanted to make asparagus and whipped sweet potatoes but it is just for lunch and I might want something less filling but pretty. I will start some searching.

I posted a recipe a while back called Golden Mountain, from an old cookbook I have. It's a molded custard made from mashed carrots, and it actually sounds pretty good - the recipe was basically unseasoned, but I know you're a pretty creative cook, you might even want to add some ginger or some such thing to it. The recipe called for one large mold, but I think it would adapt well to smaller ones. I don't know, just a thought.

I am going to make this with sweet potato if I have time, otherwise it is just mashed sweet potato with lite coc milk. Thanks!
