what am I thinking of?

I'm remembering the vegetarian version of some common dish, but I can't think of what it was. an ex-boyfriend's mother made it for me once. It was basically vegetable soup with dumpling type stuff on top. But I can't remember what it was supposed to be originally to look it up and modify it to make it ibs and veggie safe.

I've got a bunch of leftover cooked veggies and trying to figure out how to get some soluble fiber in there to make a casserole-type dish. any suggestions?
