Even after review a bunch of recipes here and elsewhere, I'm totally stuck. What are some good light meal recipes?
Husband's not real fond of fish, but he could be persuaded to eat tilapia or mahimahi. (That would necessitate a trip to the store, but that's okay.)

Are you looking for light calorie-wise or light food-wise?
One of our favorite dinners is garlic chicken and rice. I cook bite-size pieces of chicken breast with about 1 T marg (or skip it and do non-stick spray instead) and generous sprinkling of garlic powder, salt, and pepper. I cook the rice (1 C) in a can of FF chicken broth, 1/2 T or so melted margarine, more garlic, and chopped parsley.

How 'bout a fritatta or omelette, perhaps with fresh french bread?
Maybe portabella mushroom burgers?
