chicken breasts
1 can chipotles in adobo
a little bit of tequila
colored bell peppers
yellow onion
package sliced mushrooms
garlic, salt, cumin, chili seasoning
Lawry's fajita seasoning (no MSG)
fake cheese and sour cream
flour tortillas
salsa (recipe to follow)

Put breasts in freezer bag and add 1/2 to 1 can chipotles according to tolerance and garlic, cumin, salt and optional chili seasoning and couple tablespoons tequila. Marinate 1 hour. Remove breasts from bag leaving peppers in bag (if you like spicy smoosh a pepper or 2 onto the breasts.) Discard marinade. Heat grill to high and add peppers and onions in quarters on a medium heat part of grill. Grill slowly until soft. Meanwhile add mushrooms in a foil boat and chicken breasts. Grill to your liking, making sure peppers and onions get soft. Slice everything. Put seasoning in 2T hot water and pour over grilled fixings. Warm tortillas and put on fake sour cream, grilled stuff, cheese and salsa.

Salsa:
about 4c chopped, seeded tomatoes (about 6-8 tomatoes -I used gold romas that I squeezed over a garbage can)-chop in food processor and drain some
1 small purple onion, chopped
1-2 cloves garlic
1t olive oil
1t salt
1/2t pepper
1t cumin
minced hot peppers to taste I used 4-5 tiny hot ones or 2 serrano
1T or so balsamic vinegar
several tablespoons fresh chopped herbs of your liking (since I hate cilantro I used oregano and basil)
Let sit 1/2 hour before serving if possible. If you use gold tomatoes they look pretty with blue baked corn chips.

A sprinkle of lime is good on fajitas and salsa.

I think you can omit the chicken and marinade some portobellos in the chipotles. Then just omit the sliced mushrooms too. So it will be mushrooms, pepper and onions with the fake dairy and salsa.

I love fajitas and salsa and pretty much anything Mexican. And the pic is making my mouth water! LOL Is that a pic from a batch you made? It's very festive!

Yes I made that batch the other day and it worked out really well. I had made some earlier but it hadn't been so great. I took the pic since it looked so pretty with blue chips and I put some peppers around it to make it artsy. I am certainly no photographer!
I am going to make one last batch of salsa this weekend since I have no more tomatoes after that. I found out if you heat the salsa to boiling and packed in sterilized pint jars you can process it 10 min and it will be safely canned.
