I was getting really sick of seeing bland looking white egg omelets, so what I did was dipped my fork into a jar of mustard. I find that if I only dip my fork into the mustard I get a nice yellow colour for my omelet. The first time I tried it, I put in too much and it changed the taste....but with practise, you can get the yellow look of an omelet without changing the taste. Let me know if this is helpful. I get a sense of normallcy with a normal looking omelet.

Hehe... funny that you should mention this. I put a bit of chili sauce in my eggs and it gives them a slight yellow-orangeish hue that mimics the colour of whole scrambled eggs a bit. I do love the taste of chilies but I think it's because of the colour that I can't eat my eggs without them! That whitish-greyish colour of cooked egg whites really gets to me... lol
