I made up a rice casserole sort of thing tonight and it turned out so bland. I thought it would be yummy. I took 1 can diced tomatoes with jalapenos and 1 can stock and 1 can full of long grain rice. I cooked it about 15 minutes ( maybe too long) and put in a casserole and put baked chips and rice shreds on top. It sounds good but is really blah.

That's the first thing that popped into my head. I'm thinking about what I typically put into chili... chili powder, garlic, onion, cinnamon, cayenne, sometimes Tabasco. Oh yeah, and cumin. Almost forgot that.
It sounds like an experiment that definitely bears repeating and tinkering-with, though.

...since I'm too lazy to make one from H's book. Does anyone have any favorites on the milder side?
Thanks

This definitely calls for fresh cilantro! Definitely celery salt. Maybe some cumin? Garlic/onion salt? Chili powder? Red pepper flakes? A splash of worcestershire sauce? A twist of lemon (fresh) and a little zest? A splash of mango nectar? (Caesar mix would be funky, i.e. as in the drink seasoning mix.)
Kate.

I just use ortega. I think that all salsas are relatively safe because they are very very low in fat.

I hadn't overly spiced it because I didn't know how hot the jalapenos would be. The tomatoes with green chilis in the smaller can are super hot. And I was trying to come up with a family friendly super easy side dish. DH had it again yesterday for lunch- God bless him!- and put a lot of butter and some homemade salsa on it and then liked it. I think the problem is that it was dry and overcooked. Well butter makes everything taste better! So as for next time I will probably add some garlic and chili and cumin and some margarine and cook it less. Thanks for the suggestions.
