I usually don't use fresh herbs because I usually end up buying them and then they go bad by the time I want to use them...or I have to buy a whole bundle and I live alone and only need a bit.

So, I was shopping at Trader Joes yesterday and I found these new products in the frozen veggie section. Dorot Herbs They are so cool. Just keep in your freezer and pop out a cube or two for when you need them! I bought the Basil, Parsley, and garlic (not shown in the web site but they do have it)...if I ever get the nerve to try garlic! One cube equals one clove garlic. They stay edible in the freezer for a long, long time...

Now, I just need to find some recipes that require fresh basil and parsley so I can use them! I should have gotten the dill, as I eat a lot of fish. Next time for sure!

You'll have to give us a review when you try them. Glad to hear I'm not the only single cook who wastes a ton of food out there.

How awesome! And also ironic that you should mention that today. I grew my own herbs for the first time this year and just tonight froze them so I can continue using them once the season is over. Same idea!

And like Kree, it's funny you mentioned that, because although we don't have TJ's here, I have some fresh herbs that I'm going to freeze in cubes for using during the winter. It makes sense to me - every time I buy fresh herbs, I end up throwing most of it out.

How do you do this? I don't have a TJ's nearby and I always end up tossing some when I do bother to buy fresh.

The post seems to be down now. So, I'm not sure if you guys were able to see those cute little "ice cube" herbs!

Here's the ice cube method:

web page

I just froze mine between sheets of wax paper on a cookie sheet, in single layers, then transferred them to a freezer bag after about an hour.

This is a fabulous idea and one I'm going to try. Right now I have a pot of garlic-onions. They grow like green onions but have a garlicky taste..I was wondering how I could preserve what is left before they went to seed.
I hate dried basil..it tastes like nothing so this is great for that. Kandee

Now it's not working! Darn, they were so cool looking and each "cube" was equal to exactly on T, so no cutting and measuring required! Just pop out a T of the herb in the recipe.

Stupid website.

For most recipes, a tbsp of water isn't going to make a difference, and you can just throw the cubes right in, frozen. I guess the only exception would be when you add the herb right at the end - I have some recipes that call for adding cilantro *right* before serving, for example - in that case I'd thaw them, not because the water will make a difference, but just because I don't want chunks of frozen stuff in my finished dish.

So if you just freeze them without putting them in water, does that mean you can use them in uncooked dishes, like putting thawed cilantro in guacamole and thawed basil in Heather's Italian Lemon Tuna Sandwiches? Also, do you freeze the herbs as whole leaves or already chopped?

We've got a bumper crop of cilantro and parsley (although Joe is going to try his hand at pesto for himself) and I'd love to save some.

Thanks.

Wash them, throw them in the chopper, and then put them in ice cube trays. Once they're frozen, transfer them to a ziploc bag. Then when you want them, POOF! You just throw in an ice cube or two and you've got flavour!!!! EASY AS PIE!!!!!!!!!!!

Sand, this is my first time freezing herbs, so I haven't tried thawing them yet! I don't see why you can't use them in fresh dishes, although I've heard they can get a little discolored by freezing. Supposedly if you blanch them first they retain their color better, but I didn't bother.

I'll give it a try, then, if my husband leaves any after his great pesto experiment.
