Wow, I feel kind of lonely doing these ... no one else seems to be cooking except Angela.

I am going to try HanSolo's Crockpot Chicken Cacciatore. I actually made it yesterday, but because of my stupid stomach I haven't tried it yet. I ate the plain pasta instead.

Ooo I had an idea to grill cherry tomatoes and french bread cubes on rosemary skewers. I am pretty excited about this one. It will need some garlic and olive oil. I am making it with grilled homegrown zucchini and grilled salmon with rosemary. i just made the salmon recently but DH loves it like that. I am also making hambrugers/boca burgers and homegrown potatoes, hakka ginger chicken , shrimp and plum skewers with my famous spicy spinach (DH never gets sick of it).

I made a great pasta sauce this week and you would never know it's good for you! I got the idea from a friend who adds lentils to store bought spaghetti sauce. I blended together one can of lentils and one can of tomatoes. Both cans were approximately the same size, and I think this would work better in a food processor than using the immersion blender. Then I stirred in a can of chicken breast. I used italian flavoured tomatoes and they were a bit too sweet for this, so I tried to compensate for that by adding vinegar to the sauce. Also threw in some chili flakes. Next time I'll also add some oregano or taco seasoning.

This sauce is really nice and thick and resembles a restaurant prepared meat sauce. I ate it on pasta initially, but I have also made sandwiches with it and jalapeno flavoured soy cheese, then baked it for a bit to melt the cheese. Next plan is to use it for burrito filling. I think it would also be great in lasagna and I might try that this weekend, especially since I still have so much left!

Aww, don't be lonely, Jen! I haven't been participating because it's been too hot to think about cooking, so I've been eating lots of cold sandwiches and veggie burgers. Now that it's finally cooling down slightly, I have a friend coming for the weekend and don't want to make any food plans! But I'll be back cooking with you soon, I promise.

I was wondering if the What's Cooking? was still going! I have been SOOOO busy lately, I've barely had time to breath! In September things will be less hectic for me, and I'm hoping to really get back into my cooking. Plus, I always cook more during cooler weather!

Thanks for keeping it going for us!
