It's very hard for me to give up my "real" cheesy quesadillas, so i really want to try the soy chedder alternative inside a flour tortilla w/ some salsa, yummmmmm... But i'm not sure about the taste of that cheese alternative, i'm nervous to buy it! Does it taste like cheese?

I don't know, but stay FAR FAR FAR away from the vegan gourmet cheddar. It's inedible (and you can read more of me complaining about it if you do a search on it, lol)

I've tried the Galaxy brand cheddar twice, and I just don't think I can get used to it. I'm okay with the moz and Swiss varieties, though. I am tempted to try the Smart Balance stuff. Has anyone tried that?

I love the Galaxy Veggie Shreds. I make everything with them and think they taste as close to real cheese as you can get.

I really like the rice shredded cheddar cheese a little better if you can find it. I think it's Galaxy that makes it.

I can't remember the brand right now because I don't have it in the house, but I buy a rice mozarella or cheddar when I can find it and I actually like it quite a bit And I'm not a big fan of most soy cheeses at all... Not sure about how it would melt though, never tried it. That's a pretty usual complaint with "fake" cheeses. If I can think of the brand I'll let you know!
