I don't think I've posted this before... well, hopefully I haven't. This is a great thing to have on hand for those sudden chocolate cravings - or if you find that standard dessert recipes just make way more than you can eat before the rest goes moldy.
To make the mix:
1 box chocolate cake mix (Duncan Hines is safe)
1 box chocolate instant pudding mix (check the ingredients - Jello brand is safe)
Combine the 2 mixes well and store in an airtight container with the following instructions...
WHEN YOU WANT CAKE:
Spray a LARGE mug with cooking spray. Lightly beat together 1 egg white (see note) and 2 tbsp water in the mug. Add 1/2 cup of the mix and stir well. Microwave on HIGH 2 to 2 1/2 minutes.
Top as desired - I like a spoonful of cherry or raspberry all-fruit jam and a dollop of lite cool whip, but Hershey's Lite chocolate syrup (dairy-free!) or a simple icing of confectioners' sugar and a little soy milk work too - and eat warm! (And yes, it's good plain too!)
I have no idea what the fat content of this is, but I've been eating it safely for years, and I'm really sensitive to fats, so it can't be *too* bad!
NOTE: Do NOT use anything larger than a LARGE egg white. If you typically buy extra-larges or jumbos, you'll be using too much egg white!
You can also substitute 1-2 tbsp Egg Beaters... adjust the water accordingly so you end up with 4 tbsp of "liquid" total. (Thanks for the tip, jen!)

This sounds really great! I'm gonna try this soon! (I have such a sweet tooth!) You could probably experiment with a vanilla or lemon version too!

hrm- I melt marshmellows with cocoa and sugar and water to make chocolate sauce.. that would work on this too...

I haven't tried anything but chocolate, but with all the flavors of cake mix and instant pudding out there, you could come up with all kinds of flavor combinations. Just check the pudding mix, to make sure it's dairy-free and doesn't contain any other trigger foods.
