After opening the block, is it best kept in the fridge drained for a couple of days?
Or
Is it best kept in the water?
The Akumaya brand (silk) doesn't seem to have much excess liquid.

I keep my left over tofu in the water it came in if any. If you get the smaller boxes with almost no water, a tight ziplock bag should last it a couple of days.
If you drain your tofu of water and freeze it, it takes on a bread like texture. If you really dry it out (like with paper towels or something) and then freeze it, it takes on a mock-chicken like texture. Try it out in stir fries and more! (yes i love my tofu )

keeping it sealed keeps it best
either frozen or just refrigerated I guess
