I am really confused about Tofu...there are many different types - which type do you use for what? Is there something in particular I should be looking for when I purchase it? Anne

Hi Anne! There are two main types of tofu: regular and silken. Silken is a lot mushier and is usually used in puddings, dips, and things like that. Regular is a lot firmer and can be cut up and used in place of meat. It's also usually better as a cheese substitute because it crumbles a lot better. Both types come in soft, medium, firm, and extra firm, depending on what you want to use it for. If you find recipes they usually tell you which type to use. I hope that helps!

Personally, I like silken tofu a lot better.. the regular kind seems sort of spongy to me, I don't really like the texture. Silken has sort of a creme-caramel texture, and the extra firm stuff is firm enought to stor-fry or grill.
