Angel food cake pan question

I just bought one. (I figured I might as well make angelfood cake from a mix instead of buying readymade all the time.) Anyway, why is the pan in 2 pieces? (It's a Wilton non-stick pan I got at Bed, Bath & Beyond) How does the batter not leak out and how does one move it from the counter to the oven without incident? I'm confused!

Don't worry. Just put the top part in the bottom and pour in the batter. It does not leak out (unless you got a flawed one or something). When it is done put it upside down on a bottle. Then when it is cool run a knife along the edges and then lift out the cake. The outside part will stay and you can pull the cake off the bottom part and then slice.

I have never succesfully used a non stick pan- I miss my old one... it works wonderfully for other types of cakes, but for angel food and sponge cakes which hang upside down- they tend to fall out of the nonstick ones (at least in my experience!) its a bit more to clean up a more traditional pan, but no issues with the cake not staying put while cooling!

So I also have a question regarding angel food cake pans -- I just bought a regular (not non-stick) pan at Williams-Sonoma this weekend. I'm going to use it to bake angel food cakes, of course, but I tried it out for a regular cake yesterday -- and it was a bit difficult getting it out. Of course, I greased and floured it, and I used a knife to loosen it, but it was still hard removing it from the center post. I ended up turning it upside down, and kind of shaking it until it came loose, but the center kind of crumbled when I did this. Any ideas on how to remove the cake without destroying it? Or should I get a non-stick for regular cakes?

It is probably tough just because it is new. Angelfood cakes should never have the pan greased or they will not rise, but I guess when making other cakes grease it really well at first. I am not sure if this is right though.
