What's Cooking? - Week of 5/23/05 - RESULTS!

This week I tried Kree's Crockpot Garlic Brown Sugar Chicken. OMG - it was SOOOOO GOOOOD!!!! I could smell it before I even opened the door - my mouth was watering till Mikey came over and we could finally eat! LOL We both loved it!! Kree, you rock!!!!

BTW - for those wanting to know, my new toy worked great! I had it cook for 8 hours on low, then it switched over to "warm". I liked it, because sometimes (at least in my slowcooker) if I cook chicken breasts too long, they get dry. They came out perfect! Oh, and if anyone does get this also - the instructions say to set your model first. At first I thought it wasn't working, because I hit the button for this, but nothing was happening. I actually had to hit "cook time" first, and then it let me choose my crockpot model, so the instructions were a little backwards.

I made Little Minnie's Junior Mint Brownies tonight and they were very yummy! I used soy margarine instead of the applesauce. I was wondering though to cut the fat down even more could I do 2 tablespoons of soy margarine and part applesauce. If so how much applesauce would I use? I think these are my new favorite treat!

We had Orange Marmalade Marinade for Salmon and we loved it. I bought 1 lb of salmon which is usually enough for the 4 of us. Well my husband went looking for more salmon and said he loved the marinade. It is defiantly a keeper. Meike didn't like the salmon but only becuase it was crispy. I broiled it and I thought it was perfect. She just has an adversion to anything crispy. Strange child lol. Well, I'm being paged so I'll end here. Thanks Kree.

Is 1/4 cup the same as 4 tablespoons? If so then you could use 2 tablespoons of each. I'm going to have to try these but I too just went to the store. Maybe next week. I'm so disorgainized lately I'll be lucky if I remember to buy them at all.

Melissa and Heidi, I'm so glad you both liked the recipes! Those are two of my favorites... good choices!

Melissa, thanks for the update about your new toy. I'll have to look into getting one of those! So when it's on warming mode it's still warm enough to kill any bacteria, I take it? My mother raised me to be pretty anal about food that's left out too long, so I just want to make sure!

Definitely! I had to suffer for 2 hours smelling it before Mikey got here, and it was on warm by the time I got home! LOL And it came out steaming.

I'm anal about that kind of stuff too. I think it kinda works like a rice cooker or bread machine when it switches to warm.

Numero Uno!

Today I made Immune Boosting Pasta . I'd forgotten that my garlic crusher had broken so I had to chop the garlic instead and I totally overdid the garlic! Never mind vampires, I'm gonna be knocking people out with my breath for DAYS. Was very yummy tho. I had an idea that it might be even yummier with low-cal mayo instead of marg...or how about a garlic AND basil pesto??? Hmmm, must experiment!

Maybe I should get a crockpot??? Whaddya think? Is it all chicken recipes or is there crockpot stuff for me (no meat, but fish) that Si would like too?

I also made your Lower Fat Oatmeal Molasses Cookies and they were so good. I blame you for eating too many, lol. I had to post and tell you that Zoe loved them too hehehe. She is 7 months today. It was probable not the best thing but she stole it out of my hand and tried eating it quickly. I broke pieces off for her and she was very happy. She is trying out her new tooth !

This week I made White sauce and wild mushroom pasta bake . I liked it and my DH really, really liked it, so definitely a success.

Cook's Notes:
I used rice milk instead of soy milk.
I used 1 pound of sliced white mushrooms instead of wild mushrooms.
I baked for 25 minutes at 350 degrees.
I used 1 cup of uncooked elbow macaroni; it made about 2-3 cups cooked.
I did use the tomato.
When I made the white sauce, I seasoned it as recommended in one of my cookbooks: 1/4 tsp salt, 1/8 tsp pepper, dash of paprika, 2 Tbsp sherry. When I make it again, I'll stick with the salt, pepper, and paprika - maybe even increase the salt a little - but try a more definite additional seasoning, like basil. Alternatively, a chicken bouillon cube might add nice flavor.

I made Shrimp risotto last night and it was great! SO yummy...Si and my parents appreciate it too. I added 2t Herbes Provencal to the recipe btw.

Next time I think I'll add more mushrooms or even some zucchini. I have a feeling this is going to become a regular.

Bev's Linguine Pesto was lovely for lunch...tho I think it could have done with the optional pine nuts (the store had run out).

So I made Kree's Lemon Meringue Pie sorta....I made the crust from Heather's 5-minute Pumpkin Pie (LF graham cracker) and made the filling from the Lemon Meringue Pie with key lime juice instead, and with no meringue....to me, it tastes kinda like not very sweet lime jello, not a huge fan (I only had a bit, Mac was eating the first piece for breakfast this morning)...he thought it was ok, but not great either....chalk one up to experimentation.

Oh, and the reason I can't do the key lime pie recipe on the boards is it has tofu in it, and I can't have soy stuff.

Last night I made FF Banana Bread It came out wonderful. I did have to bake it for more than 45 minutes, as the recipe suggests, closer to 65 minutes. It was very easy to make and came out perfectly!

I made Little Minnie's Junior Mint Brownies last week. They came out really good. They are a little more cake-like and I like my brownies fudgy, but I am not sure what to do differently to fix that. I was also curious to find out how they would taste if you stirred in some whole Junior Mints before baking them, instead of melting them all. Either way - this recipe is definitely a keeper!! Thanks Little Minnie!

I believe Butter Buds are dairy - so no, they are not safe. I use I Can't Believe it's not Butter Light - this does contain a small amount of dairy, but I use VERY little of it and I usually do ok. Others may be able to suggest a completely dairy-free butter substitute.

Welcome to the Boards. Boy, am I glad to see you. I'm 51 and, although people on here don't discuss age much, I have a sneaking suspicion I'm on the high end. Bunch of young whipper-snappers around here.

I looked up ButterBuds and their Website says:

What are the ingredients in Butter Buds?
Butter Buds contains maltodextrin (a natural carbohydrate derived from corn), natural butter flavor (extracted from the butter oils and then dried to a powder-like form), salt, dehydrated butter, guar gum and baking soda.




What this means to me is that ButterBuds has dairy derivatives in it, so strictly speaking, it's off the menu. If the amount of dairy is insignificant, you may be able to tolerate it - some people can handle small amounts of dairy with no trouble. Unfortunately, the only way to know is to try. My advice would be to avoid it until you're stable on the diet, then try some and see how your tummy reacts.

In the future, you might get more attention to a question like this if you start it as its own post, rather than making it a reply to something else. That way people who aren't interested in who cooked what, for example, but are interested in ButterBuds will see an appropriate topic for your post.

You can also do a Search to find information that already exists. I just did a search on ButterBuds and found this existing thread that mentions it. (I should have followed my own advice and searched before I checked it out on my own!)
