help with Celiac dinner

I have been looking forward to making a Celiac friendly dinner for company and all of a sudden it is coming up. I need good suggestions for dinner and dessert and of course want something really good and maybe not what they always have. I have a flourless cake recipe but then it is chocolate and not safe for me so... I don't mind making tough or fancy stuff either as long as it tastes good and turns out. Please help.

being the gourmet cook you are. I have the least problems in GOOD restaurants, bar none. Tell me what you WANT to make and I can steer you to a substitution or an alternative if one is even needed.
Just remember to stay away from anything with wheat, barley, rye or oats in it...and pick your spices wisely...McCormick is safe..fresh is even better....and then there are a lot of other things to consider, but for just one dinner, you won't need to be an expert on eating gluten free....as far as preparation goes...pans that once held gluten can be lined with foil.

Gosh I am starting to freak out now. I actually have to line pans? How do I know if I need to? And spices, I had not thought of that. I am so glad you are helping.

Ok I am thinking grilled fish, rice, and a vegetable and dip appetizer so far. I have a really yummy flourless cake recipe but it is unsafe for me. I might make it though and just have a little bit. In general it is stuffed with whipped cream. I could substitute cool whip which would make it slightly safer. But if you have a dessert idea that I could eat too but that everyone would enjoy I would really like to hear about it! I know some soy sauce is unsafe. I looked at my LaChoy which is the only brand I like and it seemed gluten free; is this true?
This is my cake recipe note this is not IBS safe- it is for others not me.

Lighter than Air Chocolate Cake roll:
6oz. bittersweet chocolate, chopped
3T. water
6 eggs, separated
2/3c. sugar
1/4t. salt
1T. cocoa

Preheat oven to 350º. Oil a 15x10 inch shallow baking pan (jellyroll pan). Line with parchment paper. Melt chocolate and water over simmering water. Cool to lukewarm. Beat yolks, 1/3c. sugar and salt for 8 minutes with a hand mixer. Fold in melted, cooled chocolate. Beat egg whites with clean beaters until stiff. Gradually add remaining 1/3c. sugar at the end of beating. Fold one third of whites into chocolate mixture then fold in remaining whites. Spread batter evenly onto prepared pan and bake until top is dry to the touch, 15-18 minutes. Transfer to wire rack. Cover top of cake with 2 layers of damp paper towels and let stand 5 minutes. Remove paper and cool completely. Loosen edges with a knife. Sift cocoa powder onto cake and lay 2 sheets of parchment paper on cake. Place another baking sheet on cake and invert. Pull of bottom parchment.

Filling:
1c. heavy cream
3T. powdered sugar
2T. Grand Marnier
1t. finely grated orange zest
(or replace liqueur and zest with cappuccino mix or espresso powder and kahlua)

Beat cream, sugar and liqueur with cleaned beaters until stiff. Fold in zest. Spread filling over cake. Put a long platter next to cake. Using paper as an aid, roll up cake jellyroll style, beginning with a long side. Carefully transfer to platter, seam side down. Cake will crack but still hold together. Dust extra powdered sugar and cocoa on cake just before serving. For a pretty presentation, cut slices diagonally (serves 8 or 10) and lay on plates. Garnish with chocolate orange segments (or for coffee filling use chocolate covered coffee beans) and more powdered sugar.

Isn't powdered sugar unsafe? Should I process regular sugar? Maybe I am not thinking right on this. I really don't know much about gluten free eating since I haven't needed to.

That depends..if they are Teflon they usually have some scratches unless they are brand new, in which case yes, you line with foil if you are cooking on a range or if baking, line with parchment paper...stainless steel is safe because it is smooth enough not to hold any gluten. Isn't powdered sugar unsafe? Sometimes, but usually it's just cornstarch that is added..give me the brand name you want to use.. Should I process regular sugar? You can make your own powdered sugar in a blender...ever try this? Maybe I am not thinking right on this. I really don't know much about gluten free eating since I haven't needed to. Ahh, be glad...eating for IBS is a piece of cake compared to eating for Celiac Disease..but both can be done..it just takes a little advanced thinking and planning....
let me know how you are going to prepare the fish, and in what..plus the rice and veggies....You probably have it all right..but I'll double check for you if you'd like...
Oh, and have your kitchen super clean before you cook..and all gluten items stashed elsewhere..and if in doubt prepare on paper towels..and don't cut on any cutting board, like wood, that could hold ANY gluten...smooth acrylic is best. Oh yes, and drink wine while you cook..........it will help calm you nerves...(just kidding)

I really appreciate your help Kandee. I am glad about LaChoy but that must be tough because kikkoman is the only kind at restaurants (I don't like kikkoman so I have noticed this.) Well if I do grill fish I will use 2 grill baskets which have only had fish in them and I am pretty sure no gluten. They couldn't hold it anyway I think. The rice would be in the rice cooker. I would put lime, ginger, garlic and soy sauce on the fish (mahi mahi). I made it Thursday and it was so good. I will be careful with the cutting board too; mine are scratched up. I could buy a new one; I might need a new one.
Ok in the night I thought of a dessert idea. I don't know about cool whip since it has "modified food starch" which I think is unsafe. So I was thinking of making the cake (which is jelly roll size) and cutting out circles and putting berries on them and homemade choc sauce (someone posted recently) and then a choice of cool whip or whipped cream and a cake round on top.
For the appetizer (I kind of need an appetizer as I have to cook this right after church. It is the speaker we are having over and 2 others. Yet this meal will be quick and we can get out evening to ourselves LOL.) I am thinking raw veggie strips with peanut sauce. It is very yummy; I made it for a shower once. I will use my old fatty peanut sauce recipe and maybe make a safer one just for me to nibble on. I do love peanut sauce. I will paste my recipe.
Peanut Sauce: not IBS safe, for others to eat not me
1 can lite coconut milk
2T. red curry paste or another spicy Thai sauce (I use Thai pepper and some garlic)
1/4c. fish sauce
3T. sugar
1c. ground peanuts (about 1c. 2T. whole peanuts, do not increase peanuts or sauce will be bland)
Simmer in a small saucepan for 15 minutes, stirring almost constantly.
Does this seem gluten free? I mean peanuts and coconut milk should be safe right? (Gosh we don't hear that often around here LOL!)

I am making the simple summer dessert with crunchy pecan cookies for dessert. Some other time I will make the chocolate cake. This is easier too. I still need to figure out a sidedish but all I can think of is steamed veggies like broccoli.

Ahhh, good for you..something you can make that is GF and you can have it too!!! These cookies sound so good I'm going to try them..I've been craving cookies!

Steamed veggies are fine...you can always make an optional cheese sauce on the side if someone (other than you) wants to jazz them up more...or just use some lovely fresh herbs with the veggies to liven the flavor..Kandee

Yep, sounds like you're on top of it alright..please let us know how it went after it's over. I know the conferences that they have for Celiac patients include a gourmet dinner..(very expensive)..but your's sounds just as good! I know your guest will be highly impressed Tamara..I would be!!
