What's Cooking? - Week of 05/16/05

This week I'm making IBS Peppermint Fudge Cake revised for Weight Watchers .

I already bought the baby food prunes. My DH, bless his heart, didn't so much as blink when they came rolling down the grocery store checkout counter.

between Tuesday- Thursday I am making Little Bear's Mock Tuna Salad
i will be using the tempeh since I am okay with it and have been looking for something else to do with it besides grilling or for stirfrys.
hopefully this weekend I will get to make Heather's Banana mango Breakfast Pudding , or I may make Heather's Lemon Asparagus pasta
Maybe if I am feeling ambitious and bored I will do all three this week!

I'm back from my vacation, but I'm not sure if I'm going to try something new this week or not... it's that time of month and I'm wicked nauseous. But we'll see, maybe by the end of the week I'll feel like cooking.

I did whip together a cake tonight, using a recipe from one of my old cookbooks, and I think I'll try this chocolate frosting that Heather posted a while back. I'll post the cake recipe tomorrow, btw, if it ended up being good.

I'm going to try Kree's Vanilla Soy Ice Cream with rice milk subbed for the soy milk. Granted, it's was getting warm enough for ice cream here, and today it's all cold and rainy and icky Stupid unpredicatible oscillating weather!

I made this a few months ago and added cocoa because one of the girls wanted chocolate ice cream. It turned out really good. I also used rice milk.

I just made it in the nick of time! LOL Wasn't sure if I'd have a chance to cook anything this week (which I didn't) so didn't want to commit. Knew it'd be a hectic week.

But....today I decided to try Sharon's Peanut Butter Bread. It's in the bread machine right now - will report back later!

This bread sounds so good, and easy I may try to make a GF adaptation. Leave it to Sharon Mello to have so many good recipes.....I just wish the fabulous Ms M was still posting!!

I wish she was too....she's like a legend around here!

I haven't tried it yet, but so far it is HUGE!!! If I like it, I may try the regular size loaf next time (I have the Electric Bread cookbook where Sharon got it from, and she posted the large size recipe. She recommended it to me.) Anyway, I think I'd also put it on lightest setting for the crust. I had it on medium but it came out rather dark. So far just gotta taste test it, but that will have to be tomorrow. Will report back on it! (under results of course!)
