I just made these and they are quite good, but I might leave out the orange next time or add something else.
Orange-Apple-Raisin-Carrot Muffins
2 cups all-purpose flour
1 3/4 cup oat bran
3/4 cup packed brown sugar
1/3 cup dry soymilk
1/4 cup flaxseed I left this out
4 teaspoons cinnamon
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
2 cups shredded carrots
2 cups chopped Granny Smith apple
1 cup raisins. chopped
1 cup soymilk
1/4 cup canola oil
2 tsp vanilla extract
3 large egg whites
1 thin-skinned orange, unpeeled and quartered
1. Preheat oven to 375
2. Lightly spoon flours into dry measuring cups; level w/ a knife. Combine flours and the next 8 ingredients (all-purp flour through salt) in a large bowl, stirring well with a whisk. Stir in carrot, apple, and raisins.
3. Combine milk, oil, vanilla, egg whites, and orange in a blender or food processor; process until smooth. Make a well in center of flour mixture; add soymilk mixture; stir just until moist.
4. Spoon batter into each of 24 muffin cups coated with cooking spray. Bake in batches at 375 for 20 min or until muffins are browned and spring back when touched lightly in center. Remove the muffins from pans immediately, and place on a wire rack.
Makes 24 muffins: 141 calories each, with 3 grams of fat, 2 grams of fiber (if you added acacia you could increase it) and 4 grams of protein per muffin.
Edited to say I left out the flaxseed and that the fat is only 3 grams while the protein is 4. (lots of mistakes this morning!)
