Spinach/ Egg Help

Alright, pre-IBS in the mornings I used to eat the most wonderful things.

They were little quiche like things, but made from frozen spinach, Egg Beaters, shredded cheese, and green peppers. Mix, and then I baked in aluminum cups in a muffin pan, so in the morning, all I had to do was pull off the foil and microwave. It was wonderful.

I've been experimenting to make them safe. I don't particularly care about the green peppers, take them or leave them. (At this point, probably leave them). Last night I tried scrambling an egg beater and blending it with some steamed spinach, and that went pretty well. It was a little dry, so today I might try a bit more liquid. (or maybe soy milk?). But, that's allot of "prep time" for the in the mornings, and its such a tiny amount that it doesn't even work will in my mini-food processor. I thought it might work better if I could blend several days worth all at once.

But, can anyone thing of a way to bake them in those aluminum cups again, and then just microwave each morning?

Also, this tasted more like souffle, which was good, but is there any way to puree the spinach and still have it taste quiche-like?

could try babyfood spinach thats blended so you should be able to prebake them

I'm not sure about the quiche thing, but I often throw a spinach sauce into scrambled eggs in the morning. Just throw a can of spinach, drained (or fresh and steamed spinach) into the blender or food processor with some water, veg stock or soy milk, garlic, basil, etc. and keep it in the fridge. Then I just mix it with my eggs while they're cooking.

I've never tried it but I think it might work if you just put egg whites and the spinach goo into a cup in the microwave. I know my father always makes poached (whole) eggs like that in the microwave. You'd have to experiment with it.
