Tomato Question

This may be a long shot, but is there anything one can add to or do to commercial pasta sauce to make it less acidic?

I've got a pizza casserole recipe and I think I've figure out what to sub for the cheese (Galaxy shreds) and the ground beef (Morningstar Farms crumbles), but I'm at a loss for the pasta sauce, other than to use less of it. (I have a jar of Barilla brand.) Thanks!

not sure on commercial sauces.. when making sauce add sugar to make it less acidic, but most commercial sauces have a lot of that.. also when I make sauce I use whole tomatoes and seed them because the seeds are bitter and they normally are left in commercial sauces...

I have a recipe in one of my cookbooks for a super-fast tomato sauce composed of garlic, olive oil, 14 ounces of tomato puree, and 6 tablespoons of dry red wine. In the notes about the night she came up with this recipe, the author says:

The red wine added several interesting notes as well as body to the tomato puree and it cut the acidity.




This doesn't entirely make sense to me - I thought red wine was acidic itself - but the author is Marian Burros, who is a New York Times food columnist and has written at least 6 cookbooks. So you'd think she would know what she's talking about.

I add a little bit of sugar to my commercial sauce. I don't know if it helps or not, but I have acid reflux and the sauce never seems to bother me much.

Are we talking a couple of table spoons, a quarter cup, to taste, or what?

I probably only add about 1 or 2 tablespoons, personally.

Tomatoes and spagetti sauce really make me bloated and cause me a lot of pain...but I absolutely LOVE tomatoes and sauces. What can I do? I'm afraid adding sugar won't be enough. I mean, I'm afraid to try it and be in pain again.
